Pumpkin Spice Granola

A granola recipe that is grain-free, and refined-sugar free that is perfect for the pumpkin season or any other time of the year.

Ingredients

  • 2 cups cashews
  • 2 cups mixed nuts
  • 3/4 cups hazelnut meal
  • 1/2 tbsp pumpkin spice
  • 1/4 cup liquid sweetener
  • 1/8 cup melted coconut oil

Instructions

  • Preheat rhe oven to 350°F and line a large, rimmed baking sheet with parchment paper.
  • Add all the nuts in a food processor and blend for a few seconds. You want them to be chopped, but not to the point of getting flour.
  • Transfer the chopped nuts into a bowl and add the rest of the ingredients. Stir until well-combined. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake for 15 minutes stirring halfway.
