Peanut Butter Granola
This granola is grain-free and super easy to make. It is perfect to top your yogurts, smoothie bowls, or to eat by itself.

- 1 cup cashews
- 3/4 cup pecan flour (you can also use almond flour)
- 1 cup shredded coconut
- 1 tsp salt
- 1/4 cup melted coconut oil
- 3 tbsp vanilla syrup
- 1 tbsp peanut butter
Preheat oven to 325°F and position a rack in the center of the oven.
Use a food processor to break down cashews. I suggest to pulse a few times so you won't end up with pieces that are too small.
In a large mixing bowl, combine the coconut, cashew pieces, pecan flour, and salt.
In a small mixing bowl, combine peanut butter, syrup, and coconut oil. Stir in dry ingredients.
Spread the mixture evenly onto a large baking sheet and bake for 10 minutes. Then remove from oven, stir, and return to oven for 10 minutes.
