Peanut Butter Granola

This granola is grain-free and super easy to make. It is perfect to top your yogurts, smoothie bowls, or to eat by itself.

Ingredients

  • 1 cup cashews
  • 3/4 cup pecan flour (you can also use almond flour)
  • 1 cup shredded coconut
  • 1 tsp salt
  • 1/4 cup melted coconut oil
  • 3 tbsp vanilla syrup
  • 1 tbsp peanut butter

Instructions

  • Preheat oven to 325°F and position a rack in the center of the oven.
  • Use a food processor to break down cashews. I suggest to pulse a few times so you won't end up with pieces that are too small.
  • In a large mixing bowl, combine the coconut, cashew pieces, pecan flour, and salt.
  • In a small mixing bowl, combine peanut butter, syrup, and coconut oil. Stir in dry ingredients.
  • Spread the mixture evenly onto a large baking sheet and bake for 10 minutes. Then remove from oven, stir, and return to oven for 10 minutes.
