No Cheese Cake

Cheesecake made without any dairy. They can be served for any occasion. It is super easy to make and quick.

Ingredients

Crust

  • 1/2 cup hazelnut meal
  • 1/2 cup shredded coconut
  • 1 tbsp coconut oil
  • 1 tbsp sirup

Filling

  • 1 15 oz. can full fat coconut milk
  • 1/2 cup frozen strawberries
  • 1 tbsp xylitol
  • 1 tbsp gelatin

Instructions

Crust

  • Prepare some containers in which you are going to serve your cheesecakes. Add all the ingredients for th crust in a blender, and pulse until finely ground. Separate the crust into each container and press down.

Filling

  • Keep 1/2 cup of coconut milk and blend it with the strawberries. In a saucepan, add the rest of the coconut milk and cook over low heat. Sprinkle the gelatin over it, and whisk. Add the coconut milk and strawberries mixture, and the xylitol. Whisk to combine everything.
  • Pour the filling into each container. Let it cool before transferring them in the fridge. Let it sit overnight before serving. You can serve the cakes in the containers or on a plate by carefully flipping them.
