Lavender Rose Blueberry Muffins

Ingredients

Dry Ingredients

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup powdered sweetener (xylitol, erythritol, or stevia)
  • 5 scoops lavender lemon Vital Proteins collagen
  • 1/2 tsp sea salt
  • 1 tsp baking powder

Wet Ingredients

  • 2 eggs
  • 1 tsp rosewater extract
  • 1/2 cup coconut milk
  • 1/2 cup almond butter
  • 1/2 cup blueberries

Instructions

  • Heat oven to 350°F. Line 11 standard-size muffin cups with paper liners. 
  • In a medium bowl, add all the dry ingredients and stir well.
  • In a small bowl, add the wet ingredients and stir well. Add the content of the second bowl to the first one and stir until well combined.
  • Divide the batter between muffin cups. Bake muffins 30 to 40 minutes or until tops are no longer wet and a toothpick inserted into the middle of a muffin comes out clean.
