Cookies for Parties

By making one batch of this recipe, you will make enough to bring for a small party or event. I actually made this recipe when I had to bring something for Open House at school. They are easy to make, gluten-free, and dairy-free.

Ingredients

  • 3/4 cup shortening
  • 3/4 cup xylitol
  • 2 tsp vanilla extract
  • 3 eggs
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 3 cup tigernut
  • 1 cup hazelnut
  • 3/4 cup chocolate chips

Instructions

  • Preheat the oven to 350°F. Line a cookie sheet with parchment paper.
  • In a large mixing bowl, add the shortening with the xylitol, and stir until well combined. Add the vanilla and stir again.
  • Stir in eggs, flours, salt, baking powder, and chocolate chips until well combined.
  • Use a cookie scoop to scoop out some dough and make into a round ball. Place on parchment paper. Once you have placed all the cookie dough, use a fork or spoon to flatten them out.
  • Bake for 15-20 minutes.
