Cookies for Parties
By making one batch of this recipe, you will make enough to bring for a small party or event. I actually made this recipe when I had to bring something for Open House at school. They are easy to make, gluten-free, and dairy-free.

- 3/4 cup shortening
- 3/4 cup xylitol
- 2 tsp vanilla extract
- 3 eggs
- 1 1/2 tsp baking powder
- 1 tsp salt
- 3 cup tigernut
- 1 cup hazelnut
- 3/4 cup chocolate chips
Preheat the oven to 350°F. Line a cookie sheet with parchment paper.
In a large mixing bowl, add the shortening with the xylitol, and stir until well combined. Add the vanilla and stir again.
Stir in eggs, flours, salt, baking powder, and chocolate chips until well combined.
Use a cookie scoop to scoop out some dough and make into a round ball. Place on parchment paper. Once you have placed all the cookie dough, use a fork or spoon to flatten them out. Bake for 15-20 minutes.
