Best Gluten Free Chocolate Chip Cookies Ever!

The recipe has been inspired by Train Sweat Eat recipe. It contains oats and wheat flour which I cannot consume. I decided to make my own version. It is super good! You won't regret making it.

Ingredients

  • 140 g ground flaxseed
  • 120 g tigernut flour
  • 80 g coconut oil (solid)
  • 80 g xylitol, erythritol, or powdered stevia
  • 70 g syrup (see notes to find out which one I use)
  • 50 g chocolate chips (see notes to find out which one I use)
  • 50 g almond flour
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

  • Preheat oven to 350°F. Line a baking pan with parchment paper and set aside.
  • In a bowl, add all ingredients except chocolate chips and coconut oil. Mix well. Add coconut oil and knead the dough. It will be easier to do it with your hands to make sure you don't end up with big chunks of coconut oil in one cookie. Stir in chocolate chips just until blended.
  • Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart. You can use a cookie spoon if you have one or you can just use your hands.
  • Bake for 10-15 minutes.
