BBQ Zucchini Boats
These zucchini boats are easy to make and are quick to make when you are running out of time to make dinner. This recipe is gluten-free and can also be made dairy-free by omitting the cheese or using a dairy-free option.

Servings: 3 people
- 3 zucchini (cut lengthwise)
- 1 lbs. ground beef
- 1/2 cup shredded cheese
- 2.5 fl.oz BBQ sauce (I used Primal Kitchen)
- 1/2 tsp salt
Preheat the oven to 375°.
Heat a non-stick pan and add the ground beef. Cook until it is brown (3-5 minutes).
While the beef is cooking, slice zucchini in half, and hollow them out with a spoon. Place them on a baking sheet or in a rectangular baking dish.
Add the barbecue sauce to the meat once it is cooked. Add 1/2 tsp of salt and stir it.
Spoon mixture into zucchini boats and top each with cheese.
Bake for 20-25 minutes.
